Powerful and complex, the nose evokes dried and candied fruits coated with fine, toasty notes. On the palate, the ample and generous mouthfeel develops with vibrant notes of citrus fruits, yellow fruits and spice.

WINEMAKING

Direct pressing. Fermentation in barrels of 1 and 2 years old.

WINE MATURATION

10 months in barrel then 6 months in tanks. The wine is bottled after 2 winters.

FOOD MATCH

As multitude of dishes pair well with Symphonie de  Novembre:  enjoy as an aperitif or with semi-cooked foie gras, fresh foie gras with apples and grapes, ewe's milk cheese, nougat dessert, tarte tatin, fruit sabayon.
