TASTING NOTES
On visual examination, the richness of this wine is evident through its pretty golden color. The nose is at first musky and spicy then opens with aromas of raisins, medlar and quince. Finish after aeration with notes of candied apple and pineapple. The lively and full mouthfeel sets the tone of a generous and slender wine. Tasty and powerful, the mid-palate develops with notes of honey, finely stewed ripe fruit, smoky and spicy notes. The end of mouth settles with an explosion of flavours where citrus fruits dominate and bring a lot of vivacity.

Direct pressing of the grapes.
WINE MATURATION
Barrel Fermented in one year old barrels and aged on total lees with stirring for 10 months.

TERROIR
Clay-silica, with southeast exposition.
GRAPE VARIETY
Petit Manseng. Vines of 30 years and more. Picked at the same time as the great sweet wines.

28 hl / hectare.
FOOD MATCH
Savoury cuisine with apples, grapes, quince, figs, asparagus puff pastry, monkfish in a chanterelle sauce, filet mignon with autumn fruits. Many dishes will combine harmoniously with Canopée. A very pleasant match with foie gras and sweetbreads with morels.
